Ingredients

  • Rabbit Fillet 2 pieces
  • Lemon ½ piece
  • Orange zest 1 piece
  • Lime 1 piece
  • Asparagus 5 oz
  • Brown Sugar 0 oz
  • Olive Oil 0 fl oz

Step-by-Step Guide

Step 1

Preheat the oven to 355°F; squeeze the juice from the lime, half a lemon, and the orange cut in half, slice the remaining orange into wedges.

Step 2

In a saucepan, add the sugar, pour in the citrus juice, and cook over medium heat for 10 minutes until slightly thickened, then remove from heat.

Step 3

Make crosshatch cuts in the skin of the duck, season with salt and pepper.

Step 4

Place the duck skin-side down in a preheated skillet, sear over medium heat for 4 minutes, flip and cook for another 1.5 minutes, season with salt and pepper; transfer to the oven for 12 minutes; remove and let rest for 4–5 minutes.

Step 5

In the skillet used for the duck, drain the oil, leaving 3 tablespoons; sauté the asparagus over medium heat for 2 minutes.

Step 6

Slice the duck into pieces.

Step 7

Arrange the duck on a plate, place the asparagus beside it, drizzle with sauce, squeeze orange juice over, and serve.
