
Drunken Chicken

Description
Not just a recipe, but a celebration. The boiled chicken will spend the night in a thick solution of sherry and brandy.
Ingredients
- Poultry 1½ kg
- Onion 2 heads
- Ginger 5 oz
- Medium-dry sherry 15 fl oz
- Brandy 5 fl oz
- Scallions 5 oz
- Salt to taste
Step-by-Step Guide
Step 1
Wash the chicken, pat the cavity dry with a paper towel, and stuff it with julienned ginger and halved onions. Pour enough water over the chicken to just cover it. Bring the water to a boil, skim off any foam, and simmer the chicken for 30 minutes.
Step 2
After that, remove the chicken from the heat, take it out of the pot, and let it cool. Then, remove the skin and cut it into serving pieces – thighs, drumsticks, wings, and breast.
Step 3
Place the pieces of chicken in a shallow container with high sides, rub them with salt, cover with plastic wrap, and refrigerate the chicken for six hours.
Step 4
Combine half a liter of broth with sherry and brandy, pour the mixture over the chicken pieces, cover with plastic wrap, and refrigerate overnight. Serve with green onions and coarse sea salt.
