  • Olive Oil 2 tablespoons
  • Salad Potatoes 2 pieces
  • Milk 2 tablespoons
  • Capers 0 oz
  • 33% Cream 5 fl oz
  • Lemon ½ piece
  • Dry White Wine 2 tablespoons
  • Olives stuffed with lemon 0 oz
  • Whole egg 1 piece
  • Leek 0 oz
  • Salt to taste

Step-by-Step Guide

Step 1

Cut the dorado along the back, break the backbone at the head and tail, trim the flesh along the skin, remove the bones along with the remaining flesh, entrails, and gills.

Step 2

Rinse the fish, season with salt. Fill the prepared carcass with mashed potatoes mixed with some capers, drizzle with oil, and bake in the oven until cooked through.

Step 3

For the sauce, finely chop the leek and sauté it in wine, add olives and capers, and purée.

Step 4

Pour in the cream, reduce with the egg yolk in a double boiler.

Step 5

When serving, place the stuffed fish on a plate, drizzle with the creamy sauce with wine and leek.
