Ingredients

  • Dorado 2 pieces
  • Ocean salt to taste
  • Ground Black Pepper to taste
  • Olive Oil 4 tablespoons
  • Rosemary 2 sprigs
  • Thyme 4 sprigs
  • Lemon to taste

Step-by-Step Guide

Step 1

Clean the fish by removing the scales, gutting it, cutting out the gills, and rinsing well under running water.

Step 2

Rub each fish inside and out with oil, salt, and pepper. Place the herbs and a couple of lemon slices inside the belly and on top.

Step 3

Line a baking dish with parchment paper. Place the fish inside and seal the edges of the paper to create an envelope. Cook at 355°F (350 degrees Fahrenheit) for about 20 minutes until done. You can open the envelope 5 minutes before it's done to brown the crust.
