- Cilantro 0 oz
- Dorado 10 oz
- Olive Oil 1 tablespoon
- Honey 4 tablespoons
- Mild Chili Spice ½ piece
- Garlic 2 cloves
- Lime 1 piece
- Bulgur 5 oz
- Spanish onions ½ piece
- Courgette 1 piece
- Orange Bell Peppers 1 piece
- Carrot 1 piece
- Parsley 0 oz
Step-by-Step Guide
Step 1
Prepare the garnish. Dice the zucchini, red onion, carrot, and bell pepper, sauté them in butter, and add finely chopped garlic. To the sautéed vegetable mixture, add pre-cooked bulgur and sauté until the bulgur is golden. Add chopped herbs and soy sauce. Mix thoroughly.
Step 2
Prepare the fish. Clean the dorado from the backbone without breaking the fillet. Season with salt and pepper, place it in a tray greased with olive oil, and bake at 300 degrees until cooked, about 8-10 minutes.
Step 3
Two minutes before it’s done, brush the dorado with the prepared sauce: mix honey with finely chopped chili pepper, soy sauce, lime juice, and finely chopped garlic. Cook for a couple of minutes until the sauce caramelizes.
Step 4
Serve. Place the bulgur on a plate, next to it, the dorado. Garnish with a sprig of cilantro.
