Description
As a fish with sufficiently firm flesh, dorado holds its shape well, making it convenient to cook by steaming or grilling. If you are unable to find fresh dorado, you can substitute it with another fish that maintains its structure during cooking, such as hake, whiting, or sea bass.
Ingredients
- Dorado 5 lbs
- Cotton Oil 4 tablespoons
- Parsley 1 stalk
- Lemon 1.25 pieces
- Butter 5 oz
- Salt to taste
Step-by-Step Guide
Step 1
Preheat the oven to 375°F. Pour the corn oil into a heat-resistant dish of appropriate size.
Step 2
Season the fish inside and out with salt, make a diagonal cut on each side, and stuff them with parsley and a slice of lemon.
Step 3
Place the fish in the dish, drizzle with the juice of one lemon, add pieces of butter, and bake for 20–25 minutes. Serve immediately upon readiness without removing from the dish.
