Ingredients
- Vegetable Oil 2 tablespoons
- Veal Tenderloin 4 pieces
- Campbell's Beef Broth 10 fl oz
- Salted Butter 2 tablespoons
- Garlic 2 cloves
- Shallot 0 oz
- Oyster Mushrooms 5 oz
- Cognac 5 fl oz
- Heavy cream 10 fl oz
- Dijon Mustard 1 tablespoon
- Worcestershire Sauce 1 tablespoon
- TABASCO® 1 teaspoon
- Chopped Sage Leaves 1 tablespoon
- Scallions 1 bunch
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the oil in a skillet over high heat. Season the steaks with salt and pepper. Cook in the skillet to your desired doneness. Transfer the cooked steaks to a plate and set aside.
Step 2
Return the skillet to high heat and pour in the broth. Cook for about 10 minutes, until about 1/3 of the broth remains. Pour the broth into a bowl and set aside.
Step 3
Melt the butter in the skillet, sauté the chopped garlic and shallot. Then add the sliced mushrooms and cook until they release their juices and the liquid evaporates.
Step 4
Then pour in the cognac and ignite. Cook until all the alcohol evaporates and the flames go out. Then add the broth, cream, mustard, Worcestershire sauce, and TABASCO sauce. Return the cooked steaks to the skillet and cook, stirring the sauce, for about 4 minutes. Plate the steaks. Add the chopped parsley and green onions to the sauce. Mix well. Pour the sauce over the steaks. Enjoy your meal!
