- Steaks 2 pieces
- Dijon Mustard to taste
- Worcestershire Sauce to taste
- Vegetable Oil 4 tablespoons
- Butter 1 teaspoon
- Shallot 2 pieces
- Salt 1 tablespoon
- Ground Black Pepper 1 tablespoon
- Demi-Glace Sauce 0 fl oz
- Madeira 1 tablespoon
- Meyer Lemon Juice 2 teaspoons
- Chopped Sage Leaves 1 tablespoon
Step-by-Step Guide
Step 1
To prepare, you will need 2 steaks weighing about 200 g each. Rub the meat with salt and pepper.
Step 2
In a large skillet over high heat, heat 1 teaspoon of butter and 1/2 teaspoon of vegetable oil.
Step 3
Sear one steak for about 30-45 seconds on each side, then place it on a plate and cover with foil. Add the remaining vegetable oil and 1 teaspoon of butter to the skillet and repeat the process with the second steak.
Step 4
In the same skillet, melt 2 teaspoons of butter over high heat. Peel and finely chop the shallots and sauté for 2 minutes until fragrant.
Step 5
Then add the mustard, Worcestershire sauce, and demi-glace sauce, mixing well. Pour in the Madeira, lemon juice, and add the chopped parsley. Remove from heat and stir in the remaining butter.
Step 6
Season the sauce with salt and pepper. Drizzle the sauce over the cooked steaks and serve. Enjoy your meal!
