Pollo alla diavola
Ingredients
- Mild Chili Spice 2 pieces
- Red Long Chili Peppers 5 pieces
- Poultry 1 piece (1 - 1.5 kg)
- Chopped Sage Leaves to taste
- Salt to taste
- Citrus Zest Mix to taste
- Ground Black Pepper to taste
- Meyer Lemon Juice to taste
Step-by-Step Guide
Step 1
Wash the chicken (1 - 1.5 kg), pat it dry, cut it along the breast, and flatten it.
Step 2
Make the marinade: mix oil, juice of one lemon, finely chopped lemon zest and fresh chili, crushed dried chili pods, sage, salt, and pepper.
Step 3
Rub the marinade all over the chicken, marinate for 2 hours, turning occasionally.
Step 4
Cook in the oven at 180°C (350°F) for 45 minutes, basting with the juices and marinade. Then cook under the broiler for 5 minutes on each side. Serve with salad leaves and lemon.
