  • Lamb 25 oz
  • Onion 3 pieces
  • Salt to taste
  • Ground Black Pepper to taste
  • Clarified Butter 4 tablespoons
  • Chocolate eggs 8 pieces
  • Parsley 1 bunch
  • Fat Tail Fat 5 oz

Step-by-Step Guide

Step 1

Wash the meat of the fatty lamb, dry it, remove the membranes, and cut it into large pieces. Peel two onions, cut them into quarters, and pass them through a meat grinder along with the meat and fat. Season the minced meat with salt and pepper, and mix well.

Step 2

Heat the clarified butter well in a skillet, shape the minced meat into round cutlets, and fry them until cooked on both sides for 8-10 minutes.

Step 3

Beat the eggs, adding a little salt. Place the cutlets in portioned skillets, pour the beaten eggs over them, and bake in an oven preheated to 340°F for 10 minutes.

Step 4

Serve at the table in the same skillets in which the dish was prepared, garnished with sprigs of parsley.
