Ingredients
- Ground meat 20 oz
- Chicken Egg 1 piece
- White bread 2 slices
- Milk 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Butter 0 oz
- Herbes de Provence to taste
- Hard Cheese 0 oz
- Wheat Flour 0 oz
- Grated Pecorino Pepato Cheese 5 oz
- Sour Cream 2 tablespoons
- Ground Dried Garlic to taste
Step-by-Step Guide
Step 1
Soak the bread in milk (note: the amount of milk listed is for the sauce, not for the bread) and leave for 3-5 minutes.
Step 2
Mix the ground meat (chicken, pork, or beef) with the egg, soaked bread, salt, garlic, and pepper. Knead until homogeneous.
Step 3
Shape the prepared mixture into cutlets, placing a piece of butter and hard cheese (small cubes of 0.5-1 cm) in the center of each cutlet. Roll in flour. You should get about 12 small balls.
Step 4
Fry the cutlets on both sides until golden brown (about 1-2 minutes on each side).
Step 5
For the sauce, mix the milk, sour cream, salt, pepper, herbs de Provence, grated cheese, and a small piece of melted butter (note: milk and sour cream can be replaced with cream).
Step 6
Place the fried cutlets in a greased baking dish and pour the sauce over them.
Step 7
Bake in a preheated oven for 20-30 minutes at 200-430°F.
Step 8
Note: It is advisable to let the finished dish rest in the turned-off oven for half an hour to an hour for the sauce to thicken completely.
