Crushed Potatoes with Smoked Paprika
Ingredients
- Young Potatoes 16 pieces
- Garlic 4 cloves
- Fresh Thyme 4 sprigs
- Olive Oil 3 tablespoons
- Grated Parmesan cheese 0 oz
- Sea Salt to taste
- Ground Black Pepper to taste
- Smoked Paprika 1 teaspoon
Step-by-Step Guide
Step 1
Boil the potatoes in a sufficient amount of water until tender, so a fork easily pierces them, but do not overcook. This should take about 12 minutes after boiling.
Step 2
Meanwhile, strip the thyme leaves and grate the cheese. Crush the garlic cloves with a garlic press and mix them with the thyme leaves and olive oil.
Step 3
Preheat the oven to 410°F.
Step 4
Drain the water from the pot with the potatoes.
Step 5
Line a baking sheet with parchment paper.
Step 6
Spread the potatoes 5–7 cm apart. Using a potato masher or a glass, gently crush each potato, turn it 90 degrees, and crush again. In other words, the potatoes should resemble thick pancakes. If the potatoes crumble, it's okay; just gather the pieces back together.
Step 7
Brush with the olive oil mixture with thyme and garlic, and sprinkle with coarse salt, freshly ground pepper, and top with grated cheese (ideally Parmesan or any salty cheese).
Step 8
Bake in the oven for 15-20 minutes until golden brown under the broiler setting.
Step 9
Remove from the oven and sprinkle with smoked paprika.
Step 10
Serve with a salad or as a side dish to meat or fish.
