Ingredients

  • Butter 0 oz
  • Vegetable Oil 3 tablespoons
  • Coarse Salt a pinch
  • Salad Potatoes 5 lbs
  • Spanish onions 4 pieces
  • Thyme to taste

Step-by-Step Guide

Step 1

Preheat the oven to 375°F.

Step 2

Melt the butter in the microwave or in a small saucepan on the stove, then mix it with the vegetable oil.

Step 3

Peel the potatoes and slice them as thinly as possible using a mandoline or a sharp knife.

Step 4

Grease the bottom and sides of a baking dish (Ø 22–25 cm) with a mixture of butter and vegetable oil (1 tablespoon) and arrange the sliced potatoes inside (place the potato slices vertically).

Step 5

Peel the onions and cut them into thin rings. Carefully insert the onion rings between the potato slices.

Step 6

Add red pepper flakes to the butter and vegetable oil mixture to taste, along with two pinches of salt. Brush this mixture over the dish. Season with salt.

Step 7

Bake the potatoes for about 1 hour and 15 minutes, then remove the dish, place thyme sprigs on top, and bake for another 35 minutes until done (the potatoes should be crispy). If the potatoes start to burn on top, cover them with foil.

Step 8

Serve hot with sour cream or cream and pieces of bacon.
