Description
Creole jambalaya from the French Quarter of New Orleans is the result of a blend of culinary traditions from various cultures. Essentially, it is a rice dish made with ham, vegetables, and whatever else may be available in the kitchen.
Ingredients
- Vegetable Oil 0 fl oz
- Garlic 3 cloves
- Onion 1 head
- Orange Bell Peppers 1 piece
- Celery stalk 1 piece
- Sausages 15 oz
- Skin-On Chicken Breasts 15 oz
- Canned Tomatoes (Pelati) 30 oz
- Tomato Puree 15 fl oz
- Bay leaf 2 pieces
- Chicken Broth 15 fl oz
- Rice 10 oz
- Shrimp 10 oz
- Dried onion powder 1 tablespoon
- Ground Dried Garlic 1 tablespoon
- Dried Rosemary 1 tablespoon
- Fresh basil leaves 1 tablespoon
- Dried Chamomile ½ spoons
- Cayenne Pepper ½ spoons
- Ground Black Pepper 1 tablespoon
- Paprika 3 spoons
- Salt to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Prepare the Creole seasoning. Mix together paprika, dried onion, dried garlic, oregano, basil, black pepper, and cayenne pepper.
Step 3
Dice the onion and bell pepper.
Step 4
Heat oil in a heavy-bottomed pot, add onion, bell pepper, and celery, and sauté for 8–10 minutes, stirring occasionally.
Step 5
Add the minced garlic and stir. Then, add the sliced sausages and chicken meat.
Step 6
Simmer for another 10 minutes.
Step 7
Add tomatoes, tomato sauce, broth, Creole seasoning, and a bay leaf.
Step 8
Add the rinsed rice. Season with salt, cover with a lid, and simmer on low heat for 35 minutes.
Step 9
Add the shrimp, stir, and cover with a lid.
Step 10
Simmer for another 5 minutes. Serve.
