Creole Chicken with Rice and Vegetables
Ingredients
- Onion 1 head
- Garlic 2 cloves
- Celery salt 5 oz
- Orange Bell Peppers 2 pieces
- Poultry 20 oz
- Tiger shrimp in brine 16 pieces
- Vegetable Oil 2 tablespoons
- Parsley 1 bunch
- Rice 10 oz
- Salt to taste
- Ground Black Pepper to taste
- Bay leaf 1 piece
- Chicken Broth 15 fl oz
- Meyer Lemon Juice 4 tablespoons
Step-by-Step Guide
Step 1
Chop the onion and garlic. Dice the celery and green bell pepper, and cut the red bell pepper into strips.
Step 2
Slice the chicken breast and sauté in vegetable oil. Remove the meat, and in the remaining oil, sauté the vegetables. Add the rice and simmer for 5 minutes.
Step 3
Pour in the tomato juice and broth. Add the meat and bay leaf. Cover and simmer for 20 minutes. Season with salt and pepper.
Step 4
Peel the shrimp, drizzle with lemon juice, and add to the stew. Simmer for 8 minutes.
Step 5
Chop the parsley and sprinkle over the finished dish.
