Step-by-Step Guide
Step 1
Cut the bell pepper in half and place it on a baking sheet skin side up. Roast in the oven under the broiler (or on a regular grill) for about 10 minutes. Let cool, peel off the skin, and chop coarsely.
Step 2
Peel and dice the onion and potatoes, then sauté them in vegetable oil. Add everything to the broth and cook until the vegetables are tender.
Step 3
Add the bell pepper and blend everything until smooth.
