Ingredients
- Crayfish 36 pieces
- Onion 1 head
- Carrot 1 piece
- Celery stalk 1 piece
- Butter 0 oz
- Dry White Wine 5 fl oz
- 10% cream 5 fl oz
- Puff Pastry 0 lbs
- Wheat Flour 2 spoons
- Thyme 1 piece
- Bay leaf 1 piece
- Parsley 0 oz
- Whole egg 1 piece
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a pot, sauté finely chopped vegetables — carrots, onions, and celery — in butter. Add two liters of water, toss in a sprig of thyme, a bay leaf, and some parsley, and simmer for twenty minutes over very low heat.
Step 2
Add the crayfish, season with salt and pepper, and cook until they turn red. Then pour in the wine, cover the pot, and cook for eight minutes. Drain the water and extract the meat from the crayfish tails.
Step 3
Crush the shrimp shells in a mortar along with the vegetables, then add the cream and mix well.
Step 4
Place the contents in a small pot and sauté the crayfish in butter, adding flour and stirring constantly, for seven to eight minutes.
Step 5
Spread the sauce made from crayfish tails on a large sheet of puff pastry, cover it with another sheet of puff pastry, seal the edges, and brush the top with egg yolk. Make a few slits in the pastry with a knife. Bake in a preheated oven at 390°F for twenty minutes. Serve with a glass of dry white wine.
