Description

Crab in Singaporean Pepper Sauce

Ingredients

  • Blue Crabs 5 lbs
  • Butter 5 oz
  • Garlic 6 cloves
  • Grated Ginger Root 1 tablespoon
  • Mild Chili Spice 1 piece
  • Ground Black Pepper 3 tablespoons
  • Soy Sauce 2 tablespoons
  • Brown Sugar 1 tablespoon
  • Oyster Mushrooms 2 tablespoons
  • Scallions 1 stalk
  • Rice to taste

Step-by-Step Guide

Step 1

To prepare the crab, remove the top shell completely, discard the insides and gray gills. Using a sharp knife, cut the crab in half lengthwise without damaging the claws. Trim the thin parts of the legs with a knife.

Step 2

Preheat the grill. Grill the crab pieces for 5-8 minutes on each side until they turn orange. In a medium heat, heat a wok and add the butter, minced garlic, ginger, finely chopped chili, and black pepper. Sauté for 30 seconds. Add the soy sauce, oyster sauce, and sugar. Cook for about 1 minute until the sauce starts to glaze.

Step 3

Toss the cooked crabs with the sauce and transfer to a serving dish. Sprinkle with chopped green onion and serve with boiled rice.
