Couscous with Vegetables

Ingredients

  • Red Bell Pepper 1 piece
  • Carrot 1 piece
  • Zucchini 1 piece
  • Garlic 3 cloves
  • Couscous 5 oz
  • Water 15 fl oz
  • Salt to taste
  • Vegetable Oil 4 tablespoons

Step-by-Step Guide

Step 1

Dice the carrot into small cubes. In a saucepan, heat 4 tablespoons of vegetable oil, add the carrot, and sauté, stirring, over medium heat for about 5-6 minutes.

Step 2

Finely chop the bell pepper and zucchini. Add them to the pan with the carrot, and sauté, stirring, until all the vegetables are cooked, about another 5-7 minutes.

Step 3

Add the minced garlic to the saucepan and sauté for 30 seconds. Pour in the water, add salt to taste, and bring to a boil.

Step 4

Add the couscous.

Step 5

Stir, remove the saucepan from heat, cover with a lid, and set aside for 5 minutes.

Step 6

When the couscous is steamed, fluff it with a fork.
