Couscous with Olives and Sun-Dried Tomatoes
Ingredients
- Couscous ½ cup
- Boiling water ¾ cup
- Italian chopped parsley 1 tablespoon
- Pitted olives 7 pieces
- Sun-Dried Tomatoes 5 pieces
- Olive Oil 1 teaspoon
- Ocean salt to taste
Step-by-Step Guide
Step 1
Place the couscous in a deep bowl.
Step 2
Pour boiling water over it.
Step 3
Add the Italian herbs.
Step 4
Without stirring, cover with a lid or plate for 4–5 minutes.
Step 5
Slice the olives into thin rings.
Step 6
Chop the sun-dried tomatoes finely.
Step 7
Fluff the couscous vigorously with a fork.
Step 8
Then add salt.
Step 9
Add the oil and mix.

Add the olives.
Step 11
Then add the tomatoes and mix.
