Couscous with Cod and Chickpeas
Ingredients
- Chickpea 1 cup
- Cod 15 oz
- Baking Tomatoes 1 can
- Onion 1 piece
- Carrot 1 piece
- Courgette ½ piece
- Mild Chili Spice to taste
- Black Cumin (Cumin) 2 tablespoons
- Couscous 1 cup
- Olive Oil 2 tablespoons
- Garlic 3 cloves
Step-by-Step Guide
Step 1
In a heavy-bottomed skillet or tagine, heat the olive oil and sauté the finely chopped onion for about 3 minutes until golden brown.
Step 2
Add the canned tomatoes with their juice. You will need one can. Simmer for about 2 minutes.
Step 3
Add the pre-cooked chickpeas. To prepare them, soak overnight, drain, and then boil until tender in fresh water. You can also use 1 can of canned chickpeas.
Step 4
Add the finely chopped garlic, chili, and cumin, pour in 0.5 liters of cold water, and simmer on low heat for 15 minutes.
Step 5
Add the diced zucchini and carrot, and the cod fillet cut into large pieces, and simmer for another 10 minutes.
Step 6
Serve with couscous prepared according to the package instructions.
