Couscous with Chicken and Vegetables
Ingredients
- Chicken Thighs 6 pieces
- Onion 1 piece
- Orange Bell Peppers 4 pieces
- Tomatoes 4 pieces
- Olive Oil to taste
- Couscous 10 oz
- Lemon 1 piece
Step-by-Step Guide
Step 1
In a deep pot (more equipped kitchens may use a tagine), sauté the chicken thighs in olive oil until golden brown.
Step 2
Remove the chicken and sauté the finely chopped onion in the remaining fat, then do the same with the chopped bell pepper.
Step 3
Blanch the tomatoes, peel them, and finely chop the flesh. Add to the pot and sauté as well.
Step 4
Return the chicken to the pot and simmer everything together for a bit.
Step 5
Separately, prepare the couscous according to the package instructions.
Step 6
Add the couscous and stir if necessary (though this is optional). Cover with a lid and let it sit for a while.
Step 7
Season the finished dish with lemon or lime.
