Ingredients
- Bacon 4 pieces
- Ground ancho chili pepper 1 tablespoon
- Garlic 4 cloves
- Onion 1 head
- Baking Tomatoes 1 can
- Brown Sugar 1 cup
- Apple Cider Vinegar 1 tablespoon
- Worcestershire Sauce 1 tablespoon
- Dijon Mustard 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Pork Skewers 5 lbs
- Vegetable Oil 3 tablespoons
Step-by-Step Guide
Step 1
Preheat the oven to 320°F. Blend the tomatoes in a blender. Chop the bacon finely and fry it in a skillet until the fat melts. Then add the ancho pepper, minced garlic, chopped onion, and cook, stirring, for about 5 minutes. Add the tomatoes, sugar, vinegar, mustard, and Worcestershire sauce. Season with salt and pepper. Bring to a boil and cook for another 5 minutes. Remove from heat and set aside.
Step 2
Rub the ribs with salt and pepper. Heat the oil in a skillet over high heat and sear the ribs on both sides. Place the seared ribs on a baking sheet, pour the sauce over them, and bake for about 1 hour.
