Cornish hens stuffed with vegetables
Ingredients
- Cornish Hen 2 pieces
- Carrot 1 piece
- Celery stalk 2 pieces
- Pickled Apples 2 pieces
- Mustard Greens 1 tablespoon
- Thyme 3 sprigs
- Honey 2 tablespoons
- Olive Oil to taste
- Soy Sauce 1 teaspoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the vegetables and apples, slice them, and mix in a bowl with mustard and oil. Add thyme leaves, season with salt and pepper, and mix well.
Step 2
Stuff the hens with half of the vegetable mixture, make small cuts in the skin around the tail area. Cross the legs of the hens, tuck them into the cuts, and secure.
Step 3
Place the remaining stuffing in the bottom of a baking dish, and place the hens on top.
Step 4
Warm the honey in the microwave until it becomes liquid and runny, then mix with olive oil and soy sauce, and brush the hens with this mixture.
Step 5
Bake the Cornish hens for 40 minutes in a preheated oven at 355°F (350 degrees Fahrenheit), periodically brushing with the honey glaze. Serve immediately.
