Description
One of a whole series of dishes named after Duke Conde, the uncle of French King Henry IV. Conde had significant political as well as gastronomic influence in Parisian society during his time.
Ingredients
- Rice 10 oz
- Milk 0 qt
- Whole egg 1 piece
- Strawberry 10 oz
- Brandy 0 fl oz
- Vanilla Pod 1 piece
- Meyer Lemon Juice to taste
- Sugar 5 oz
- Powdered Sugar to taste
Step-by-Step Guide
Step 1
Cook the rice in milk with the addition of sugar (50 g) and the contents of a vanilla pod.
Step 2
Mix the cooked rice with the egg yolk, transfer it to a baking dish, and place it in a water bath in the oven. The oven should be preheated to 390°F. Cooking will take about thirty minutes. Once removed from the oven, let the rice cool.
Step 3
Meanwhile, sprinkle half of the available strawberries with sugar (50 g) and pour in the brandy. Mix well and let it steep for an hour.
Step 4
Blend the remaining strawberries and strain the puree through a sieve to remove the tiny seeds.
Step 5
Mix the puree with a homeopathic amount of lemon juice and powdered sugar, aiming to achieve a balance between acidity and sweetness.
Step 6
Place whole strawberries on the chilled rice and drizzle the rice with strawberry puree.
