Coho Salmon with Broccoli and Tomatoes
Ingredients
- Coho salmon fillet 1 piece
- Broccoli 15 oz
- Tomatoes 2 pieces
- 10% cream 5 fl oz
- Basil 2 teaspoons
Step-by-Step Guide
Step 1
Cut the coho salmon into pieces 2-3 cm thick.
Step 2
Season with salt and pepper, and fry in a pan for 3 minutes on each side.
Step 3
Add the cream and basil, and simmer on low heat for about 10 minutes.
Step 4
Preheat the oven to 355°F.
Step 5
Transfer the salmon with the sauce to a baking dish (or use a skillet with a removable handle – very convenient).
Step 6
Top with slices of tomato and broccoli florets, season with salt, and bake for about 20 minutes until the vegetables are cooked.
