Coho Salmon in Tomato Marinade

Ingredients

  • Coho salmon fillet 1 piece
  • Carrot 2 pieces
  • Onion 2 heads
  • Passata Tomato Sauce 2 tablespoons
  • Wheat Flour 1 tablespoon
  • Salt to taste
  • Bay leaf 2 pieces
  • Vegetable Oil 3 tablespoons
  • Fish Oil 10 fl oz
  • Meyer Lemon Juice 1 tablespoon
  • Sugar 1 teaspoon

Step-by-Step Guide

Step 1

Take fresh coho salmon, remove the head, fins, and tail. Cut along the backbone and separate from the bones. Divide the fillet into large pieces and place them in a deep frying pan. Use the scraps to prepare broth, about 500 ml, and strain it.

Step 2

Shred the carrot and onion into strips, sauté in vegetable oil with flour, add tomato paste, a bit of broth, and place it on top of the salmon.

Step 3

Add 250 ml of prepared broth, lemon juice, sugar, bay leaf, salt, and pepper to taste, cover with a lid, bring to a boil, then reduce the heat to the lowest setting and let it simmer for about 20 minutes.
