Cod with Vegetable Topping
Ingredients
- Cod fillet 15 oz
- Olive Oil 1 tablespoon
- Flaky sea salt a pinch
- Pickled Eggplant with Peppers 0 oz
- Canned Jalapeño Peppers 0 oz
- Mayonnaise 2 tablespoons
- Ground Black Pepper to taste
- Pink Himalayan Salt to taste
Step-by-Step Guide
Step 1
Finely chop the jalapeño.
Step 2
Do the same with the chili.
Step 3
In a skillet, heat the olive oil with a pinch of coarse salt.
Step 4
Place the cod fillet in the skillet.
Step 5
After 2 minutes, flip it over and reduce the heat.
Step 6
Season with Himalayan salt and cover with a splatter guard.
Step 7
After 3–4 minutes, flip it again.
Step 8
Reduce the heat to the minimum.
Step 9
After 2–3 minutes, transfer to a plate and spread with mayonnaise.
Step 10
Season with black pepper.
Step 11
Sprinkle with the vegetable topping and serve.
