Ingredients
- Cod fillet 15 oz
- Marinated cherries 5 oz
- Olive Oil 1 teaspoon
- Oranges 1 piece
- Garlic 1 clove
- TABASCO® to taste
- Salt to taste
- Lemon-Pepper Mix to taste
Step-by-Step Guide
Step 1
Season the cod fillet (chilled) with salt and pepper to taste.
Step 2
Cut the cherry tomatoes into quarters. Grate the orange zest. Peel the orange and remove the membranes, then cut it into small pieces. Mince the garlic.
Step 3
In a bowl, mix the chopped tomatoes and oranges, add the zest, garlic, a little TABASCO, and dress with olive oil.
Step 4
Place the large pieces of fish in a baking pouch, and top the fish with the tomato-citrus mixture.
Step 5
Bake until cooked through, and serve with rice or a vegetable side.
