
Cod with Tomatoes

Description
Typically, this dish uses salted cod, which is soaked in fresh water for a long time beforehand. However, salted cod is quite rare here, as is fresh cod. But frozen cod works pretty well too. You can serve mashed potatoes or boiled potatoes as a side dish. The potatoes and mash can be left unseasoned—the cod sauce will be enough to add flavor.
Ingredients
- Cod fillet 1⅕ kg
- Olive Oil 6 teaspoons
- Lemon 2 pieces
- Parsley 5 oz
- Marinated cherries 24 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In six oven-safe cooking bags, place a piece of cod, a tablespoon of chopped parsley, four halved tomatoes, the juice of a quarter of a lemon, and a tablespoon of oil.
Step 2
Seal the bag tightly after seasoning the contents with salt and pepper, then place it in an oven preheated to 355°F for fifteen minutes.
