- Cod fillet 10 oz
- Salad Potatoes 10 oz
- Mayonnaise 5 oz
- Creamy Horseradish 3 spoons
- Meyer Lemon Juice 2 spoons
- Vegetable Oil 1 tablespoon
- Parsley 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Line a baking sheet with foil and grease it with oil; preheat the oven to 390°F. Combine mayonnaise, mustard with horseradish, and lemon juice, then season the sauce with pepper.
Step 2
Slice unpeeled potatoes into thin rounds, dip them in the sauce, and arrange them in a single layer on a baking sheet. Bake the potatoes in the oven for about thirteen minutes, until they have a light golden brown color.
Step 3
Brush the remaining sauce over the cod fillets, season with salt and pepper, place the fish on top of the potatoes, and return the baking tray to the oven for another ten minutes, until the potatoes are cooked and the center of the cod pieces is opaque. Serve garnished with parsley.
