Cod with Cilantro and Lemon in Foil

Ingredients
- Cod fillet 8 pieces
- Cilantro 1 bunch
- Lemon 2 pieces
- Red Long Chili Peppers 1 piece
- Grated Ginger Root 1 head
- Shallot 2 pieces
- Soy Sauce 8 tablespoons
- Brown Sugar 1 tablespoon
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Tear the leaves off the cilantro.
Step 2
Grate the zest from the lemons and squeeze the juice from the flesh.
Step 3
Remove seeds and membranes from the hot pepper and finely chop.
Step 4
Peel and finely chop the ginger and shallots.
Step 5
In a bowl, mix the sugar with the zest, add the lemon juice, cilantro leaves, hot pepper, ginger, shallots, soy sauce, and pepper. Stir well.
Step 6
Cut eight pieces of foil and shape them into boats.
Step 7
Place one cod steak in each boat and distribute the marinade on top.
Step 8
Seal the boats and let marinate for 1 hour.
Step 9
Preheat the grill over coals.
Step 10
Place the foil boats on the grill and bake the fish for 15–20 minutes.
Step 11
Unwrap the foil and check if the fish is cooked through.
Step 12
Serve at the table.
