
Cod in Matsoni with Vegetables in the Oven

Ingredients
- Matsoni 10 fl oz
- Cod 65 oz
- Lemon 2 pieces
- Carrot 1 piece
- Garlic 4 cloves
- Tomatoes 4 pieces
- Onion 2 pieces
- Olive Oil 3 tablespoons
- Herbs 0 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Slice the onion into thin rings.
Step 2
For the cod, you can use fillets and cut them into medium pieces. If using a whole fish, cut it into steaks and remove as many bones and skin as possible.
Step 3
Take the matsoni, sliced onion, and marinate the cod. Leave it for 1 to 2 hours.
Step 4
Dice the tomatoes.
Step 5
Grate the carrot on a coarse grater.
Step 6
For the sauce, take a bowl, squeeze in the lemon juice, mince the garlic, add the spices (dried herbs), and olive oil. Mix the resulting suspension thoroughly with a spoon.
Step 7
Now take a baking dish (I use a square glass baking dish), place the carrot, tomatoes, and onion from the marinade in it, and mix. Then, add the fish on top and pour the prepared sauce over it. Cover everything with foil and place it in a preheated oven at medium temperature (180-390°F). Cook the cod for about 30 minutes, then remove the foil and leave it for another 15 minutes to brown.
