Cod fillet with fennel and potatoes
Ingredients
- Olive Oil 1 tablespoon
- Onion 1 head
- Garlic 3 cloves
- Fennel 1 piece
- Salad Potatoes 20 oz
- Chicken Broth 15 fl oz
- Orange zest 3 pieces
- Passata Tomato Sauce 2 tablespoons
- Coarse Salt to taste
- Cod fillet 25 oz
Step-by-Step Guide
Step 1
In a skillet, heat the olive oil. Add the finely chopped onion and minced garlic and sauté, stirring, until softened, about 7 minutes. Add the tomato paste and mix well.
Step 2
Cut the fennel into small pieces. Peel and thinly slice the potatoes.
Step 3
Add the potatoes, fennel, chicken broth, and orange zest to the skillet. Season with salt and pepper. Stir, cover, and cook for about 10 minutes until the vegetables are tender.
Step 4
Cut the fish into 4 pieces. Season with salt and pepper. Place on top of the vegetables, increase the heat, cover, and cook for another 8–10 minutes until the fish is cooked through.
