Cod Baked in a Pouch
Ingredients
- Cod fillet 30 oz
- Vegetable Oil 0 fl oz
- Onion 1 head
- Garlic 2 cloves
- Parsley 0 oz
- Lemon 1 piece
- Tomatoes 5 pieces
- Dry White Wine 5 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Pat the cod dry with paper towels, cut into pieces of 160 grams each, season with salt and pepper.
Step 3
Peel and chop the onion and garlic.
Step 4
Sauté the onion until soft, add the garlic, and cook for another 1-2 minutes, then transfer to a bowl.
Step 5
Finely chop the parsley.
Step 6
Slice the lemon into thin rings, removing the seeds.
Step 7
Cut each tomato into six wedges.
Step 8
Cut five sheets of parchment paper measuring 30x30 cm, fold them in half, and place 1/5 of the onion and garlic mixture in the center of the top half.
Step 9
Place a portion of fish on top, drizzle with wine.
Step 10
Sprinkle the cod with parsley, place the lemon slices on top, and arrange the tomato wedges around it.
Step 11
Cover with the other half of the parchment, fold the pouch, and seal it.
Step 12
Transfer the pouches with cod to a dry baking sheet and bake in a preheated oven at 355°F for 20-25 minutes.
Step 13
Remove from the oven, cut open the pouches, transfer to plates, and serve.
