Description

Valencian paella is just one of the few existing types. It must have a specific composition of ingredients; otherwise, it cannot be called 'Valencian.' Valencian paella must have 10 essential ingredients: rice, olive oil, water, chicken meat, rabbit meat, two types of beans: white and green string beans, tomatoes, salt, and saffron. Valencian paella can include a few more ingredients, but if any of the above are missing, it is not Valencian paella. You can add paprika, snails, pork ribs, garlic, rosemary, and other ingredients.

  • Boiled White Round Rice 15 oz
  • Poultry 20 oz
  • Rabbit 20 oz
  • White Beans 5 oz
  • Chinese green beans 5 oz
  • Potato 1 piece
  • Saffron a pinch
  • Salt to taste
  • Olive Oil 5 fl oz
  • Water 1 cup

Step-by-Step Guide

Step 1

In a wide skillet (ideally, paella is cooked in a pan of the same name), heat the olive oil with a pinch of salt.

Step 2

Sauté the rabbit and chicken meat (do not use fillets; it should be meat with bones: legs, ribs, etc.).

Step 3

Add the chopped green string beans and white beans. The classic version of Valencian paella includes large white moon-shaped beans called 'garrofón.'

Step 4

After sautéing the vegetables with the meat, add the finely chopped tomato and continue to simmer on low heat.

Step 5

Add water at a ratio of 4 parts for each part of rice and continue to simmer for another 10 minutes.

Step 6

Add saffron and salt.

Step 7

Stir in the rice, evenly distribute it in the skillet, and simmer on high heat for 8-10 minutes, then reduce to medium and then to low heat (total simmering time is about 20-25 minutes).

Step 8

Turn off the heat and serve after five minutes.
