
Classic Dumplings with Cottage Cheese

Nothing extra — a neutral dough that doesn't distract from the delicate filling. A simple, straightforward, and wonderful recipe from a local American restaurant. The recipe was shared with us by Sarah Johnson, author of the book 'Culinary Geography with Sarah Johnson.'
Ingredients
- Wheat Flour 20 oz
- Water 10 fl oz
- Chicken Egg 1 piece
- Cottage cheese 10 oz
- Salt 0 oz
- Butter to taste
Step-by-Step Guide
Step 1
Add salt and an egg to the sifted flour and mix well. Gradually pour in warm water and knead the dough until it no longer sticks to your hands. Allow the dough to rest for 15 minutes, covering it with plastic wrap or a kitchen towel.
Step 2
Roll out the prepared dough into a thin layer, use a glass to cut out circles with a diameter of 5–6 cm, place the cottage cheese filling on the dough, and then shape and pinch the dumplings.
Step 3
Boil in salted water over medium heat for 3–4 minutes.
Step 4
Using a slotted spoon, transfer the cooked dumplings to a plate, drizzle with melted butter, and season with sour cream.
