Ingredients

  • Duck 1 piece
  • Breadcrumbs 5 oz
  • Mandarins 3 pieces
  • Grated Ginger Root 0 oz
  • Orange Syrup 6 tablespoons
  • Apple 1 piece
  • Star anise 6 pieces
  • Chocolate eggs 2 pieces
  • Cayenne Pepper ½ teaspoon
  • Ground Cinnamon ½ teaspoon
  • Ground Nutmeg ½ teaspoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Wash the duck and trim off excess fat. Pat it dry with paper towels and let it rest for 15 minutes.

Step 2

Meanwhile, grate the ginger and mix it with the breadcrumbs, nutmeg, cayenne pepper, and cinnamon.

Step 3

Add the grated apple (with skin), season with salt and pepper, and mix thoroughly.

Step 4

To 2 tablespoons of jam, add the lightly beaten eggs, pour into the filling, and knead with your hands.

Step 5

Stuff the duck with the prepared filling using your hands.

Step 6

Rub the duck with salt and pepper and place it in a baking dish, surrounding it with star anise.

Step 7

Place the duck in a preheated oven at 200 °C (392 °F) for 30 minutes, then remove and drain the fat (you can use it to roast quartered potatoes for a side dish).

Step 8

Carefully brush the remaining jam on the duck, pour 100-150 ml of water into the dish, surround the duck with mandarin quarters (with skin), and return it to the oven for another 30-40 minutes. For the last 10 minutes, you can place the duck under the broiler to achieve a crispy crust.

Step 9

Before serving, cut the duck into portion-sized pieces and drizzle with mandarin or orange juice.
