Chuchvara with Lamb
Ingredients
- Salt to taste
- Wheat Flour 20 oz
- Chicken Egg 1 piece
- Water 5 fl oz
- Lamb 20 oz
- Onion 1 head
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Knead a stiff dough, roll it into a ball, place it in a bowl, cover with a napkin, and let it rest for about 10–15 minutes.
Step 2
Pass the meat through a meat grinder together with the onion, add salt and pepper.
Step 3
Take out the dough, knead it again, and roll it out to a thickness of 2 mm, cut into squares of 4x4 cm (the smaller, the better).
Step 4
Place a portion of the filling in the center of each square and shape the dumplings: fold two opposite ends of the square together to form a triangle, and tightly seal the corners of both sides together.
Step 5
Boil the prepared chuchvara in salted boiling water for about 15 minutes.
Step 6
Serve on a plate, add a piece of butter, and sprinkle with chopped herbs if desired. It can be enjoyed with sour cream, adjika, mustard, to your taste.
Step 7
Chuchvara is also very delicious served in meat broth.
