Christmas Ham
Ingredients
- Ground clove 20 pieces
- Pork Blood 15 lbs
- Water 5 qt
- Salt ½ cup
- Sugar ½ cup
- Cinnamon 2 pieces
- Ground Caraway 2 tablespoons
- Fresh basil leaves 2 tablespoons
- Garlic 1 head
- Grated Ginger Root 2 teaspoons
- Orange zest 2 pieces
- Orange juice concentrate 0 qt
- Honey 3 tablespoons
- Mustard Greens 3 tablespoons
Step-by-Step Guide
Step 1
Prepare the marinade. In 6 liters of water, add sugar, salt, 2 sticks of cinnamon, caraway, 10 cloves, dried basil, the head of garlic, grated ginger, orange zest, and orange juice. Refer to the ingredient quantities above. Place the ham in this marinade and leave it in a cool place for 3-4 days.
Step 2
After 3-4 days, remove the ham from the marinade, place it on a baking sheet, and wrap it in several layers of foil. Preheat the oven to 320°F and place the ham inside. After 15 minutes, increase the temperature to 355°F, and after another 10 minutes, to 390°F, maintaining this temperature for 3 hours to allow the meat to heat gradually.
Step 3
After 3 hours, take the meat out of the oven, remove the foil, and prepare a glaze of honey and mustard. Score the top fat in a diamond pattern, brush the ham with the glaze, and decorate with cloves. Set the oven to broil (if you don't have this setting, place the meat on the top rack and slightly open the oven door). Once the ham is browned, it can be served. Enjoy your meal!
