Christmas Duck with Rosemary and Thyme
Ingredients
- Duck 0 lbs
- Thyme 1 tablespoon
- Fresh Rose Hips 1 tablespoon
- Salt 2 spoons
- Ground Black Pepper 1 tablespoon
- Sugar 2 spoons
- Tea 0 fl oz
- Water 3 glasses
- Light Molasses 2 spoons
Step-by-Step Guide
Step 1
Take a whole duck of medium size. Partially separate the skin from the meat, being careful not to tear it or remove it completely.
Step 2
Place the duck in a suitable-sized container, laying it on its back. Cut one orange in half and squeeze the juice over the duck. Stuff the orange halves inside the bird.
Step 3
Sprinkle the duck with a mixture of rosemary, thyme, pepper, and salt. Cover the container with plastic wrap and place it in the refrigerator. After two hours, turn the duck so that it is positioned breast side down, and leave it in the cold overnight.
Step 4
In a double boiler, pour in 3 cups of water, add 2 tablespoons of sugar, and 3 bags of Earl Grey tea. Bring the tea mixture to a boil. Place the duck in the double boiler for 30 minutes. Then remove from heat and let it cool slightly (about 10 minutes).
Step 5
Rub the duck with a mixture of salt and molasses.
Step 6
Preheat the grill (or oven) to 275°F and place the whole turkey inside for 1 hour.
Step 7
Let the cooked duck rest for 20 minutes before serving.
