
Chole (Chana) Masala

Description
Serve with rice. It can also be served with naan or chapati.
Ingredients
- Vegetable Oil 2 tablespoons
- Onion 1 head
- Toasted Cumin Seeds 1 teaspoon
- Garam Masala 2 teaspoons
- Ground coriander 1 teaspoon
- Salt 1 teaspoon
- Turmeric ½ teaspoon
- Water ½ cup
- Chickpea 15 oz
- Grated Ginger Root 4 teaspoons
- Garlic 4 cloves
- Mild Chili Spice a pinch
- Tomatoes 2 pieces
Step-by-Step Guide
Step 1
Heat the vegetable oil in a saucepan over medium heat. Add the cumin seeds and sauté, stirring, for about a minute. Then add the chopped onion, ginger, garlic, chili powder, and salt. Sauté, stirring, for about 6 minutes.
Step 2
Meanwhile, peel the tomatoes. Cut the tomatoes into large pieces.
Step 3
When the onion softens, add the garam masala, coriander, and turmeric to the pan and mix. Cook, stirring, until fragrant, about 1 minute.
Step 4
Add the tomatoes, chickpeas, and water. Stirring, bring to a boil. Reduce the heat to medium and simmer, stirring, until the sauce thickens slightly, about 20 minutes. If using dried chickpeas, they will need to be cooked longer and more water should be added.
