  • Medium-dry sherry 5 fl oz
  • Roast duck 1 piece
  • Orange juice concentrate 5 fl oz
  • Soy Sauce 1 tablespoon
  • Sesame Oil 1 teaspoon
  • Sugar 1 teaspoon
  • Frozen green bean pods 5 oz
  • Watercress 1 bunch
  • Grated Ginger Root 1 teaspoon

Step-by-Step Guide

Step 1

For this salad, you will need pre-cooked duck breasts.

Step 2

Remove the skin from the duck breasts, slice it into thin strips, and remove all subcutaneous fat. Place the strips on a baking sheet and fry until crispy. Transfer the strips to paper towels to remove excess fat.

Step 3

Next, prepare the sauce: pour the brandy (or sherry) and orange juice into a saucepan and bring to a boil. Reduce the heat and simmer until the liquid is reduced by half. Then add soy sauce, sesame oil, sugar, finely grated ginger, and gently mix. The sauce is ready.

Step 4

Now, separate the duck meat from the bones, slice the meat into strips, and place it in the saucepan with the sauce. Meanwhile, in a separate pot, boil the green peas (add the peas to boiling salted water). Rinse the boiled peas under cold running water.

Step 5

In the saucepan with the meat, add the watercress, peas, and sliced duck skin, mix, add salt and pepper, and serve on a plate.

Step 6

Add salt and pepper to taste.
