
Chili Con Carne

Ingredients
- Beef 0 lbs
- Onion 3 heads
- Garlic 4 cloves
- Chorizo 10 oz
- Beans 2 cans
- Mild Chili Spice 3 pieces
- Baking Tomatoes 2 cans
- Brown Sugar 3 spoons
- Ketchup 2 spoons
- Balsamic Vinegar 0 fl oz
- Olive Oil 0 fl oz
- Oregano 1 tablespoon
- Black Cumin (Cumin) 2 spoons
- Cinnamon 1 piece
- Clove 1 tablespoon
- Bay leaf 3 pieces
- Salt to taste
- Ground Black Pepper to taste
- Spices 1 tablespoon
Step-by-Step Guide
Step 1
Cut a piece of beef tenderloin into four portions. Blend the onion and garlic in a blender or food processor until smooth.
Step 2
In a deep, heavy-bottomed pot, heat olive oil and sear the meat on all sides until browned, then transfer it to a plate.
Step 3
In the same pot, sauté the diced chorizo, then add the onion and garlic paste, all the spices and herbs, finely chopped chili, tomatoes along with their juice, balsamic vinegar, sugar, and ketchup. Season with a little salt and pepper.
Step 4
Simmer for five minutes over low heat, then pour in half a liter of water, return the meat to the pot, cover it with a lid, and cook for another two hours.
Step 5
You can place the pot in the oven and bake at 355°F for the same two hours. This will make the meat even more tender, as the heat in the oven distributes more evenly than on the stovetop. Just be sure to cover the pot with foil, remembering to poke a few holes in it to allow steam to escape.
Step 6
After two hours, add the canned beans and simmer for another half hour to an hour, then remove the pot from the heat, break the meat into pieces, and serve it with plain rice, a salad, for example, made of radishes, onions, and cilantro, along with sour cream, grated cheese, or tomatoes with onions. Alternatively, you can make do with what you have and even skip the rice.
