
Chickpeas with Leeks and Pine Nuts

Ingredients
- Chickpeas 15 oz
- Leek 1 piece
- Garlic 2 cloves
- Toasted Pine Nuts 4 tablespoons
- Lemon Juice 1½ tablespoons
- Olive Oil 1 tablespoon
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
If you are using regular chickpeas, soak them overnight and then boil.
Step 2
Finely chop the garlic and leek.
Step 3
Heat the olive oil in a skillet, then add the chopped garlic and cook for 1 minute. Add the leek and cook for 2-3 minutes until soft.
Step 4
Season the leek and garlic with salt and pepper, then add the chickpeas. Cook for 5 minutes until the mixture is hot.
Step 5
Remove from heat, add the nuts and lemon juice. Stir and serve.
