Ingredients

  • Chickpeas 1 cup
  • Turmeric ¼ teaspoon
  • Chopped Cilantro (Coriander) 3 tablespoons
  • Tamarind Paste 1 teaspoon
  • Dried Red Pepper ¼ teaspoon
  • Garlic 7 cloves
  • Tomatoes 2 pieces
  • Green Chili Peppers 2 pieces
  • Ginger Root 1 piece
  • Salt to taste
  • Canola Oil 3 tablespoons
  • Cumin Seeds ½ teaspoon
  • Mustard seeds ¼ teaspoon
  • Dried Arbol Chili Peppers 3 pieces

Step-by-Step Guide

Step 1

In a medium-sized pot, bring 8 cups of water to a boil, add the chickpeas. Reduce the heat to medium, add the turmeric, and cook for 45 minutes until the chickpeas are tender.

Step 2

Add the cilantro, tamarind paste, dried red pepper, garlic paste, tomatoes, chili slices, ginger, and salt. Reduce the heat to medium and cook for about 15 minutes until slightly thickened.

Step 3

Heat the oil in a large skillet over medium heat. Sauté the cumin and mustard seeds until they start to crackle, about 1-2 minutes. Add the peeled garlic and arbol chili; sauté the garlic until golden brown, about 6-8 minutes; combine with the chickpeas.
