Ingredients
- Chickpeas 5 oz
- Tomato 1 piece
- Onion 1 head
- Coconut Milk 5 fl oz
- Parsley to taste
- Salt to taste
- Spices to taste
Step-by-Step Guide
Step 1
Soak the chickpeas overnight. Drain and rinse. Cook until tender.
Step 2
In a large skillet, heat oil, add curry mix, chopped tomatoes, and onion. Cook for 1 minute over medium heat, stirring continuously.
Step 3
Add chickpeas, coconut milk, and continue to simmer on low heat.
Step 4
Serve with parsley. Enjoy with basmati rice or chapati.
