Chicken with Walnuts and Zucchini
Ingredients
- Olive Oil 4 tablespoons
- Chopped almonds ½ cup
- Chicken fillet 2 pieces
- Wheat Flour 2 tablespoons
- Onion 1 head
- Garlic 1 clove
- Turnips 2 pieces
- Dry White Wine 1 cup
- Meyer Lemon Juice ¼ cup
- Chopped Sage Leaves ½ teaspoon
- Courgette 1 piece
- Butternut Squash 1 piece
- Chopped Sage Leaves to taste
Step-by-Step Guide
Step 1
Heat 2 tablespoons of olive oil in a large skillet. Add the walnuts and sauté for 2-3 minutes. Transfer to a plate.
Step 2
Dredge the chicken breasts in flour.
Step 3
In the same skillet, heat the remaining olive oil and add the finely chopped onion and minced garlic. Add the chicken and brown well on both sides. Then add the julienned carrots, wine, lemon juice, and thyme. Cover and simmer for 8 minutes. Then add the julienned squash and zucchini and cook for another 2 minutes until tender.
Step 4
Transfer the chicken and vegetables to a plate. Increase the heat and let the sauce thicken slightly. Drizzle over the chicken with vegetables and sprinkle with toasted walnuts and parsley.
