Chicken with Spinach and Mustard-Apricot Sauce
Ingredients
- Olive Oil 4 tablespoons
- Skin-On Chicken Breasts 2 pieces
- Lemon ½ piece
- Onion 1 head
- Apricot Jam 4 tablespoons
- Chicken Broth ⅓ cup
- Dijon Mustard 1 tablespoon
- Spinach 1 bunch
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pound the chicken pieces and season with salt and pepper.
Step 2
Heat the oil and sauté for 6–8 minutes on both sides. Remove the chicken, add 1 tablespoon of oil, and sauté the chopped onion. Then add the apricot jam, broth, and mustard. Heat, stir, and return the chicken pieces to the pan. Reduce the heat to low and mix the chicken with the sauce.
Step 3
In the remaining oil, sauté the spinach. Season with salt, drizzle with lemon juice, and mix.
