Chicken with sherry
Ingredients
- Sweet Pepper 2 pieces
- Chicken fillet 4 pieces
- Chicken Broth 5 fl oz
- Sherry 5 fl oz
- Garlic 8 cloves
- Thyme 2 stalks
- Parsley 0 oz
- Olive Oil 0 fl oz
- Butter 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pound the chicken fillets, pour sherry over them, add thyme leaves, season with salt and pepper, and let marinate for one to two hours. Then remove the chicken, squeeze out any excess liquid, and pat dry with paper towels.
Step 2
Slice the sweet pepper into thin strips. Finely chop the garlic and parsley leaves.
Step 3
Heat butter and olive oil in a skillet and sauté the chicken until cooked through, about five minutes on one side and three minutes on the other. When the chicken is nearly done, add chopped garlic and sauté for another minute. Then remove the chicken and, along with the garlic, sauté the peppers, stirring constantly to prevent the garlic from burning.
Step 4
In another skillet, heat the chicken broth, add the strained marinade from the chicken, and simmer over high heat for ten minutes. Return the chicken to the skillet with the peppers, pour the sauce over, season with salt and pepper, and serve, for example, with mashed potatoes or rice.
